A Culinary Journey that Unites Two Identities in One Place
“hom” and “Jaras” are two restaurants at InterContinental Phuket Resort, a 5-star destination located on Kamala Beach, Phuket. These restaurants are among the most renowned on the island, offering a sophisticated dining experience that has been meticulously designed to make a lasting impression.

“hom” emphasizes creativity, seasonal local ingredients, and traditional cooking techniques such as fermentation, while “Jaras” celebrates the foundation of Thai cuisine and sustainability. Both restaurants elevate dining in Phuket, making it a world-class destination, under the leadership of Executive Chef Marco Turatti, who has played a key role in earning prestigious awards for the resort’s restaurants, including two Michelin Guide accolades. Chef Chalermwut Srivorakul, known as Chef Nui, from Jaras, has also made significant contributions, passionately pushing the culinary excellence of both restaurants to attract discerning diners.

hom: A Taste of Culinary Art and Innovation
hom is a fine-dining restaurant located at the Sawan Pavilion, surrounded by tranquil surroundings and lush greenery, creating the atmosphere of a heavenly stroll. The white, elegant building features intricate Thai architecture and interior design with shimmering silver and pearl tones, complemented by luxurious chandeliers inspired by the heavens. The restaurant features a “Wall of Creativity” that showcases various fermentation techniques, an essential component of the restaurant’s menu. Guests are invited on a journey of extraordinary flavors with the “hom experience 10-moments,” a tasting menu that highlights local ingredients from Phuket and regions across Thailand, combined with unique flavors from fermentation – an ancient preservation technique. The culinary creations by Chef Marco are inspired by seasonal local ingredients from Phuket and Thailand. Additionally, hom offers fermented beverages and wine pairings to complement the dining experience.

The “hom experience 10-moments” is available every Tuesday to Saturday at 6:30 PM, priced at 4,750++ THB per person.

Jaras: Thai Cuisine with a Focus on Sustainability
Jaras, located by the sea within the InterContinental Phuket Resort, is renowned for its sustainable gastronomy approach. The restaurant focuses on creating Thai Southern dishes based on traditional recipes, blending cooking techniques and selecting local ingredients that minimize environmental impact. The restaurant collaborates with local communities and WWF Thailand to research the potential of invasive plant and animal species as premium ingredients. With the help of the Alternative Agriculture Network (AAN), Jaras emphasizes hyper-locavorism, supporting local farmers by using fresh produce, edible flowers, and eggs from local farms, as well as fish and seafood sourced from nearby farms.

Jaras also utilizes an AI-powered food waste weighing system to track and analyze food waste, and food scraps are processed by the Oklin Food Waste Composter, which is then repurposed for farming in the local community. This creates a sustainable food cycle where food waste is transformed into valuable resources for future meals. The restaurant is committed to zero-waste cooking, ensuring every part of the ingredients is utilized efficiently.

With this philosophy, Chef Chalermwut, or Chef Nui, and his team at Jaras have created the “9-course Sustainability Menu,” which incorporates the flavors of Thai cuisine and locally sourced invasive species – such as water spinach, black bass, bighead catfish, and cherry snails – into contemporary dishes. This menu also features wine pairings selected by expert sommeliers, including the exclusive Jaras Grand Monte wine.

One of the standout dishes is the Zero Waste Kanom Jeen, made with the invasive species black bass to create thin rice noodles, served with spicy Southern curry, fish bone powder, wild vegetables, and crispy fish skin. Other notable dishes include the Meeang Pla, which uses invasive species such as Bighead Catfish, and the Phuket Curry, a tangy, fresh dish made from wild plants, as well as Crab Curry served in a mini taco with large chunks of crab and fragrant curry sauce. Another intriguing dish is the Black Ink Squid Tart, filled with squid tentacles, squid ink powder, and squid sauce, accompanied by water spinach, a local invasive plant.

The 9-course Sustainable Tasting Menu is available daily from 6:00 PM to 10:00 PM (for guests aged 12 and above, reservations must be made at least 24 hours in advance), priced at 3,450 THB++ per person, with an optional Thai drink pairing for an additional 2,150 THB++.
