The Menu: Flavours of the Italian Coast

At L’Amo Bistrò del Mare, the menu is a tribute to the Italian coast – a celebration of seasonal ingredients, timeless traditions and refined technique. Guided by Chef Daniele’s vision, each creation channels the spirit of the Mediterranean with modern artistry, evoking a true sense of place.

The journey begins with Le Tre Tartare ($88), a graceful prelude capturing the spirit of the Mediterranean in three exquisite expressions. The first features sea bass, layered with mullet roe, candied orange zest, and grated bottarga for a subtle savoury lift. Next, supple tuna belly is enlivened with Japanese lime mayo, caper berry and a tender pea cress, balancing richness with delicate acidity. Finally, Sicilian red prawns from Mazara del Vallo arrive as a sublime finale, their natural sweetness accentuated by a crown of caviar. Polpo al Josper ($32) follows – octopus slow-grilled over glowing embers in a Josper oven, tossed with olive oil, red capsicum, and brunoised chives, and served atop a warm carrot, ginger, and cardamom purée. Finished with chive stems and crisp layered potato, each bite balances smoky char, gentle spice, and fresh brightness.

In keeping with the Italian tradition of the primo, handcrafted pastas form the soul of the kitchen, each dish is a celebration of artisanal skill. The signature Spaghettone Cacio & Pepe ($88) features a luxuriously creamy pecorino and black pepper sauce, accented with premium Japanese uni and bright chives – transforming the Roman classic into a study of texture, flavor, and refined simplicity. Likewise, the Tagliolini Lime & Caviale ($118) is luminous and indulgent, gently tossed in a lime butter emulsion and finished with delicate pearls of Italian caviar that lends a subtle, briny lift to each bite.

From the sea, guests can savour the Neapolitan Impepata di Cozze ($58), plump mussels steamed in fragrant wine and garlic, lifted by a hint of citrus, served alongside toasted sourdough to relish every drop of the savoury, aromatic jus. The signature Catalana dell’Amo presents guests’ choice of seafood from the restaurant’s display counter — such as lobsters, prawns or other fresh selections — tossed with vibrant datterino tomatoes and crisp vegetables, then finished with the house L’Amo Catalana dressing. Each serving offers a refreshing interplay of acidity, sweetness and texture that evokes the sun-drenched Mediterranean, capturing both the character and namesake of the restaurant.

Transitioning to the carne, the charcoal-grilled Costolette d’Agnello alla Brace ($86) features lamb chops marinated for 36 hours and roasted in the Josper, served with red cabbage and mandarin compote, and finished with a glossy lamb jus — tender, smoky and succulent, a rustic yet refined finale.

Desserts close the experience with Italian classics.

Profiteroles ($18) arrive as golden choux pastries filled with hazelnut mousse and praline, finished with a smooth veil of warm chocolate sauce — a decadent yet elegant indulgence.

Cannoli Siciliani ($16) showcases crisp pastry shells piped with velvety sheep’s milk ricotta, brightened with candied orange peel and pistachio, then finished with a touch of chocolate — a sophisticated take on Sicily’s most beloved dolce. Finally,

Ti…Amo…Su ($19) delivers theatre and nostalgia in a tableside tiramisù of homemade savoiardi soaked in aromatic coffee, layered with luscious mascarpone cream, dusted with cocoa, and crowned with a delicate chocolate crumble — a decadent crescendo of taste and texture.
