KiSara at Conrad Bangkok introduces a six-course menu celebrating the refined artistry of Kaiseki through the distinctive flavours and ingredients of Japan and Peru

KiSara, the premium Japanese restaurant at Conrad Bangkok, introduces Nikkei Kaiseki, a new six-course dining experience that brings together the culinary traditions of Japan and Peru through a contemporary interpretation in the heart of Bangkok.

With roots tracing back more than a century, Nikkei cuisine emerged from the cultural exchange between Japan and Peru, where Japanese culinary techniques and traditions met Peru’s abundant local ingredients, including citrus fruits, chillies and seafood. Over time, Japanese precision, seasonal ingredients and delicate umami flavours became intertwined with Peru’s distinctive ingredients and vibrant flavour profiles, giving rise to the unique culinary identity of Nikkei cuisine.

At KiSara, this culinary dialogue is expressed through the refined format of Kaiseki. Each of the six courses is carefully sequenced to create a balanced journey through the flavours, ingredients and techniques of both culinary cultures.

A Harmonious Meeting of Japan and Peru

Nikkei Kaiseki brings the precision and craftsmanship of Japanese cuisine together with Peru’s distinctive flavours — from premium Japanese seafood and delicate umami notes to the bright citrus and vibrant chilli flavours characteristic of Peruvian cuisine.

Each course offers a different perspective on the relationship between the two cultures.

The experience begins with Tiradito de Cinco, featuring chutoro, hamachi, Hokkaido botan shrimp, madai and scallop, served with Red Dragon Tiradito sauce and kombu oil.

This is followed by Tomato Chawanmushi, a silky Japanese steamed egg custard elevated with ají panca and sun-dried tomato, before moving on to Plato Estacional Nikkei, a seasonal trio inspired by the flavours and ingredients of both culinary traditions.

One of the menu’s highlights is Miso Black Cod, featuring black cod glazed with sweet miso and infused with the aromatic smoke of cherry wood beneath a lava-stone dome, which is opened tableside. The dish is complemented by passion fruit and pickled ginger for a delicate balance of richness, acidity and spice.

For the main course, guests may choose between Arroz Nikkei con Tiger Prawn, creamy Japanese rice served with yellow chilli purée and grilled tiger prawn, or Lomo Saltado with Black Quinoa Fried Rice, featuring M4 tenderloin accompanied by black quinoa fried rice, piquillo mayonnaise and sukiyaki sauce.

The experience concludes with Japanese Garden, warm churros served with kinako and chocolate-miso espuma. Inspired by the calm simplicity of a Japanese rock garden, the presentation incorporates Latin American influences through a distinctly Japanese aesthetic.

A curated selection of beverages is also available to complement the menu, including Yūgen, Hikari Sour and the alcohol-free Yuzu Orchard Spritz. Each drink incorporates ingredients and flavour profiles that reflect the culinary connection between Japan and Peru.
