Discover the art of authentic Italian dining through quality ingredients and the culinary craftsmanship of Chef Fabio Nicastro at Anantara Riverside Bangkok Resort.
Anantara Riverside Bangkok Resort invites guests to discover the authentic flavours of Italy at Brio Bangkok with its Prosecco & Pizza experience. Bringing together traditional Italian cuisine and the relaxed riverside setting along the Chao Phraya River, the experience captures the spirit of La Dolce Vita – the art of enjoying life’s simple pleasures. From wood-fired pizzas and homemade pasta to sparkling wine, every element is designed to celebrate the joy of sharing good food and memorable moments.

At the heart of Brio Bangkok’s Italian culinary experience is Chef Fabio Nicastro, a Roman-born chef who grew up immersed in a family food culture deeply rooted in Italian traditions. Having developed his culinary career internationally, from Rome to Sydney, Chef Fabio draws on his connection to authentic flavours, his understanding of ingredients and his belief that food is about more than simply creating delicious dishes. For him, it is an art form that preserves culture and brings people together.
Set within a contemporary atmosphere inspired by the Tuscan region, Brio places great emphasis on culinary craftsmanship, from freshly prepared pasta to wood-fired pizzas, which remain at the heart of the restaurant’s offering.

The latest menu highlights a variety of flavours and carefully selected ingredients that reflect the character of Italian cuisine. Among the featured dishes is Filetto di Spigola, oven-baked sea bass served with aubergine purée, sun-dried tomatoes, pine nuts and basil pesto, bringing together complementary flavours and textures.
Bresaola offers a distinctive pizza topped with air-dried beef bresaola, rocket leaves, tomato sauce, Grana Padano and mozzarella. Meanwhile, Gamberi all’Acqua Pazza presents a seafood stew in a tomato-based broth seasoned with chilli and garlic, featuring tiger prawns and an assortment of seafood, served with focaccia bread.

Another highlight is Pansotti al Nero, squid ink pansotti pasta filled with smoked salmon, ricotta cheese, lemon zest and dill, accompanied by a rich lobster bisque sauce. To finish, Tiramisù della Casa, the restaurant’s signature take on the classic Italian dessert, combines espresso, Kahlúa, Savoiardi biscuits and smooth mascarpone cream for a delicately balanced finish.
More than just a dining experience, Prosecco & Pizza at Brio is an invitation to slow down and appreciate life’s simple pleasures. Whether gathering with friends, enjoying a family meal or celebrating a special occasion with someone important, guests can savour delicious food, thoughtfully selected beverages and the welcoming atmosphere of the Chao Phraya riverside. At Brio Bangkok, every meal becomes an opportunity to experience the warmth and charm of La Dolce Vita, Italian style.
