Renowned for bringing the authentic flavours of Hong Kong Cantonese cuisine to the heart of Bangkok, Summer Palace at InterContinental Bangkok invites discerning diners to savour an exclusive selection of premium grouper dishes during its Grouper Festival, available from 1 August to 30 September 2026.

Celebrated in Hong Kong as a time for families and friends to gather over exceptional seafood, the festival showcases two prized varieties of fresh grouper—Red Grouper and Pearl Grouper—both renowned for their delicate texture, naturally sweet flavour and outstanding nutritional value. Expertly prepared by Summer Palace’s master chefs using traditional Cantonese techniques, each dish highlights the exceptional quality of this premium seafood.
The festival begins with refined appetisers including Smoked Grouper with Osmanthus Flower Sauce, delicately infused with fragrant floral notes, and Steamed Grouper with Egg White and Hua Diao Wine, served in an aromatic broth and finished with salmon roe and sweet peas.

Among the signature main courses are Poached Whole Grouper with Pickled Cabbage, Sichuan Pepper and Chilli Sauce, offering a harmonious balance of tangy and spicy flavours; Braised Grouper with Bean Curd, Crispy Pork Belly, Bamboo Shoots and Shiitake Mushrooms in a clay pot; Deep-Fried Whole Grouper with Ginger, Spring Onion and Soy Sauce; and Whole Grouper Simmered in Chicken Broth with Radish and Chinese Celery, a comforting Cantonese classic.
A standout highlight of this year’s festival is the Whole Grouper Served Two Ways, where the fish is expertly prepared using two distinct cooking methods. The fillets are wok-fried with seasonal vegetables and topped with crispy shredded ginger, while the belly and head are steamed with a rich black bean chilli sauce, showcasing two complementary flavour profiles in a single dish.

The Summer Palace Grouper Festival will be available for lunch from 11:30 a.m. to 2:30 p.m. and dinner from 6:00 p.m. to 10:30 p.m., from 1 August to 30 September 2026, with prices starting from THB 1,280++ per dish.
