Acclaimed chefs and cocktail creators to define new social chapter at riverside landmark

Hong Kong, – Langham Hospitality Group today unveiled its food and beverage programme for The Langham, Custom House, Bangkok, the luxury hotel scheduled to open this December.

Led by a group of accomplished culinary and bartending specialists, the programme centres on a collection of dining and drinking venues designed to position the restored Custom House complex as a new social address on the Chao Phraya River – a place where Bangkok residents and hotel guests can meet, celebrate and linger from morning till late.

The collection will span Roi Chak Sam, a contemporary Thai restaurant; The Cotton Room, an all-day venue with breakfast, The Langham’s Afternoon Tea and a modern Indian lunch and dinner concept; T’ang Court, The Langham’s celebrated Cantonese dining experience; and Crowntail, a multi-zone cocktail bar with sweeping river views.

Set within Custom House and its adjacent heritage buildings, the venues will be shaped by history, craft and distinctive character, inviting locals and visitors to discover the landmark’s story and become part of its next chapter.

Bringing this vision to life will be a group of food and beverage talents whose careers span renowned hotels, restaurants, and some of the world’s most dynamic cities. Mr. Thitid “Ton” Tassanakajohn, whose Le Du was named No. 1 on Asia’s 50 Best Restaurants 2023, will lead Roi Chak Sam; Ms. Garima Arora, Chef-Owner of the two-MICHELIN-starred Gaa in Bangkok, will bring her perspective to The Cotton Room; and Mr. Ricky Lin Quoping will take the helm at T’ang Court, drawing on his time at the three-MICHELIN-starred original at The Langham, Hong Kong.

They will be joined by Ms. Phukvarun “Golf” Watchmon, who will set the property’s broader culinary direction as Executive Chef, drawing on more than 15 years in senior roles at some of Bangkok’s most respected kitchens; Mr. Prot Stitpittayayut, Executive Pastry Chef, who will guide the hotel’s pastry offering and The Langham’s signature Afternoon Tea, supported by French training and experience in Paris, New York and Bangkok; and Mr. Tom Hearn, Bar Manager of Crowntail, who will shape the bar’s cocktail experience following roles at Vesper in Bangkok and, in London, KOL Mezcaleria and The American Bar at The Savoy.

We want the hotel to not just be a destination for travellers, but a place where Bangkok comes together over cuisine, cocktails and shared moments by the river.”

Roi Chak Sam

Created in collaboration with Chef Ton, Roi Chak Sam will present a contemporary expression of Thai cuisine from the second floor of the Northern Heritage Building, formerly home to the country’s Import & Export Department.

Inspired by the Glorious Era of Siam and royal banquet menus served during the reign of King Rama V, the restaurant will combine rare seasonal produce, exceptional local ingredients and refined contemporary technique. Its name, meaning “three from a hundred,” references the three per cent import duty once collected at Custom House.

The Cotton Room

Located on the ground floor of Custom House, The Cotton Room will wrap around the Arrival Hall, Butler Salon and Grand Staircase. Inspired by the cotton trade that once passed through Bangkok’s ports, the venue has been conceived as a single space with three distinct expressions.

It will move from à la carte breakfast overlooking the river to The Langham’s signature Afternoon Tea, led by Chef Prot, and, for lunch and dinner, a new concept created in collaboration with Chef Garima. Rooted in Indian culinary heritage and shaped by Bangkok’s contemporary energy, the menus will unite Indian traditions, Thai ingredients and a warm, convivial spirit.

T’ang Court

T’ang Court will bring The Langham’s celebrated Cantonese restaurant experience to Bangkok, extending the legacy of the original at The Langham, Hong Kong. Located in the Southern Heritage Building, formerly the Second Post & Telegraph Building, it will offer refined cuisine in a setting that honours the longstanding cultural connections between Thailand and China.

Led by Chef Ricky, the restaurant will showcase precision, restraint and respect for exceptional ingredients through signature Cantonese barbecue specialities, handcrafted dim sum, premium seafood and wok-fired dishes. Three private dining rooms on the second floor will accommodate intimate gatherings or combine for larger occasions, making the restaurant equally suited to business meals, family gatherings and special celebrations.

Crowntail

The Southern Heritage Building will also be home to Crowntail, a multi-zone cocktail bar designed to bring new energy to the riverfront. Spanning an indoor bar, Riverside Pavilion, rooftop Two Spot bar, outdoor terrace and private pier, it will move easily from aperitifs and sunset drinks to late-night cocktails.

Taking its name from Thailand’s Crowntail Betta, a striking fish known for its crown-like fins and vivid colour, Crowntail will channel that same sense of movement and personality through its atmosphere. Led by Tom, it will draw on his London hotel-bar pedigree and Bangkok’s dynamic cocktail culture to deliver expressive drinks shaped by local ingredients and polished tableside moments.
