The series started with the eagerly anticipated Peruvian Culinary Excellence with notable Chef Santiago Fernandez, creator and inspiration behind the evening who created a delightful culmination of style, substance, and fearless modern interpretations of classic Peruvian cuisine.

Peruvian Chef Santiago Fernandez has his own restaurant named Buenazo in The Commons Thonglor Bangkok and was initially part of Na Project’s urban refugees’ kitchen—a collaborative space where immigrant families from various ethnic backgrounds cook food to raise social awareness. Growing up in Lima, Peru, Fernandez explains that even among Peruvians, the cuisine is uniquely diverse. “So, I want you to have a taste of my version of Peruvian dishes.”

Peruvian cuisine has become “one of the great culinary meccas of the world’ and after attending the Peruvian Culinary Experience at Pebbles Bar and Grill, I now know why!

The story begins from the moment we arrived at Pebbles Bar and Grill, this beautiful venue the casual comfortability of minimalist design beckons you in with its colour palate of warm naturals and the expansive glass windows capturing the ocean as the backdrop where the sunsets are truly breathtaking.

Pebbles Bar and Grill was transformed to reflect the vibrant yet sophisticated culture of Peru, with subtle Andean motifs and warm lighting that set the tone for an intimate dining experience. The anticipation was high, and the evening did not disappoint.

Appetizer

Crudo y Marinados (Ceviche de Pescado): The meal commenced with the iconic Ceviche de Pescado, a dish that encapsulates the essence of Peruvian cuisine. The ceviche was a masterclass in balance and freshness, with the citrusy leche de tigre perfectly complementing the tender, marinated fish. The use of local Peruvian ingredients like aji amarillo and cancha added authentic depth to the dish. Paired with a crisp Sauvignon Blanc Intipalka, the ceviche offered a zesty and invigorating start to the evening.

Starter

Entradas Calientes (Arroz con Pato): The Arroz con Pato followed, showcasing the chef’s ability to elevate traditional comfort food into a refined experience. The duck was cooked to perfection, tender with a rich, savory flavor that melded beautifully with the fragrant corriander-infused crice. The dish was paired with a medium-bodied Pinot Noir, whose earthy notes enhanced the dish’s complex flavors, creating a harmonious second course that felt both hearty and elegant.

Main Courses

Platos Principales (Pulpo Anticuchero or Lomo Saltado): For the main course, guests had the choice between Pulpo Anticuchero and Lomo Saltado. The Pulpo Anticuchero was a standout, with the octopus grilled to a tender yet slightly smoky finish, paired with a bold, spicy marinade that delivered a punch of flavor. The Lomo Saltado, on the other hand, offered a more traditional yet equally satisfying option, with juicy strips of beef stir-fried. The dish was a comforting nod to the fusion of Peruvian and Asian flavors. Both options were paired with a robust Malbec Intipalka, whose deep, fruity notes complemented the richness of the dishes.

Dessert

Postre (Suspiro Limeño): The meal concluded on a sweet note with Suspiro Limeño, a classic Peruvian dessert that perfectly encapsulates the indulgent yet light nature of the evening. The creamy, caramel-like filling was luxuriously rich, topped with a delicate meringue that added a touch of sweetness without overwhelming the palate. Paired with Tannat Intipalka wine, this final course left a lasting impression, bringing the meal to a satisfying close.
