Coast Beach Club & Bistro Pattaya at Centara Grand Mirage Beach Resort Pattaya proudly unveils its new special menu for 2026, introducing a refreshed seaside dining experience following a major renovation earlier this year in 2025. Guests are invited to discover exceptional flavours crafted through the collaboration of two talented chefs: Executive Chef Martin and Chef Phoom, a former contestant on MasterChef Thailand.


This exclusive partnership brings together modern techniques and high-quality ingredients to create three new signature dishes, each reflecting the artistry of contemporary cuisine and the relaxed seaside ambience of Coast Beach Club & Bistro Pattaya.
Amid the newly redesigned setting of Coast Beach Club & Bistro Pattaya—featuring breezy blue-and-white beach club tones, contemporary décor details, and an open kitchen that showcases the chefs’ craft—guests can enjoy an enhanced dining atmosphere that blends modern coastal charm with the warmth and comfort of a beachfront lifestyle. Expansive open-air seating overlooking the sea transforms every meal into a refreshing and relaxing moment.
This vibrant atmosphere serves as the inspiration for the restaurant’s new menu for 2026, meticulously created by Chef Martin and Chef Phoom to offer flavours that are simple, contemporary, and perfectly aligned with the seaside lifestyle.

Your culinary journey begins with the Heirloom Tomato Salad, a refreshing introduction to the new season. Colorful heirloom tomatoes are delicately marinated with olive oil and oregano, then served atop crispy sourdough spread with housemade pesto. Silky whipped ricotta infused with lemon zest adds brightness to each bite, while a touch of balsamic glaze and edible flowers completes this elegant yet approachable dish that celebrates premium ingredients in their purest form.
Next is the Seabass Butterflied, featuring locally sourced seabass expertly butterflied and deboned by Chef Martin, then pan-seared to crisp, golden perfection. Steamed clams enhance the natural sweetness of the seafood, while the dish’s highlight—Aegean dressing—brings together clam stock, confit artichokes, semi-dried tomatoes, capers, lemon, and emulsified cold butter for a rich, velvety finish. Served with charred lemon, this dish embodies a “resort-style ocean flavour”: refreshing, layered, and satisfying.
The experience concludes with the Roasted Lamb Rump, showcasing a harmonious balance between the bold flavour of New Zealand lamb and the freshness of seasonal vegetables. The lamb is pan-seared and oven-finished to tender juiciness, complemented by rosemary aroma. It is served with orzo cooked in herb-infused chicken stock, charred vegetables, feta cheese, and tomato ragout, with a hint of mint. Designed as the “star of the evening,” this dish brings comfort, depth, and a lasting impression.
Each of the three new dishes has been developed with exceptional attention to ingredients, creativity, and the shared vision of both chefs, offering flavours that connect beautifully with the seaside setting of Wong Amat Beach.
